Beginner question: How do I know if a plugin is asking for too many permissions?

Hi everyone. I'm just starting to self-host some tools and play with local LLMs. I keep seeing plugins that ask for a lot of permissions when I install them.

I get nervous clicking "allow all." How do you decide what's too much? For example, if a simple note-taking plugin asks for network access, is that a red flag? What are the basic things a plugin *should* need versus what's suspicious? I'm coming from a basic Linux and Docker perspective, so any rules of thumb would be really helpful 😅
